My Puerto Rican mamacita Yvette taught me how to make guava and cream cheese empanadas. It was super easy and I got all the ingredients to make it myself. One day this past week I decided I will finally do it!
After making them I thought about doing a tutorial video, but it was too late. Maybe next time. But these are are the easy ingredients!
Then since I had all this hot oil I thought about frying some chicken. I put some of my mom's secret seasoning, one egg, and then rolled in the dough and threw it in!


and then I saw this bag of fries in the freezer and threw them in the hot oil and then.....

Everything was delicious! You can even ask Jenny, she tried the chicken!
I will eventually make a fun "How to make Empanadas" video eventually. Heck, I should youtube all spanish foods Yvette teaches me.

I have a MWF 9am class.I have a TR 8am class.
I have been waking up everyday around 6:45/7am everyday with help of alarm clock.
TODAY IS SATURDAY. SLEEP IN DAY. WHAT TIME DOES MY BODY WAKE UP WITH NO ALARM CLOCK?
7:21am. I woke up mad it was so early so I went back to bed.
Other than wack morning wake ups, my first week of school was fantastic! One of my homies is in my MWF class, and again in my TR class...so I see him everyday! and this dude always makes me laugh, so it will be a great semester :) I got adjusted to the campus, figured out the time schedules and strategizing for this campuses parking spots...I am good to go!
I met up with Jenny and her friend Melissa (who I just met and is in my TR 12:30 class!) and we went to Stir Crazy. I love that place, but Jenny and I made poor decisions with our dishes when we were "trying something new". Always 50/50 chance with doing that...but sometimes you gotta live dangerously.

Jenny is semi new to the blogging world, but she is not new to being one of my favorite people and being awesome. BANABOOGIE.com is where you can find her DJ thoughts, hip hop culture thoughts, happy thoughts, homie 4L thoughts. I loves her. and I am glad to be back in South Florida where I can hang with Jenny on a REGULAR BASIS! hahahaaa finallyyyyy!!!!!

The summer is officially over, and oh what a summer it has been! 4 months of no school---this was the first year I didn't do a summer semester so I was pumped with 4 months of chillin.Weddings, California, birthdays, disney world, universal studios, warped tour, crazy people...just reflecting on my summer 08 pictures today I had fun reliving some of it :)
The Olympic closing ceremony is finishing and Jackie Chan is dancing and singing on camera. You gotta love Jackie Chan. That dude always makes me laugh.
Classes start tomorrow at 9am! I am on campus Monday-Friday! Insaaaaane. I'm pumped!

Tropical Storm Fay and I travelled to Orlando this week. When I first saw Reggie and the Full Effect farewell tour dates and saw there was a FLorida date, I was pumped! But then it said Orlando--which sucked because then I have to travel to Orlando..but it's okay. Janine was heading back to Orlando, so I hopped in her whip and got a ride to Orlando. That night was the show and ahhhhhhhhhhhhhhh it was so good. For those who know, or don't know, I am a huge Reggie and the Full Effect fan. He/it is like one of my top 3 favorite bands. Ughh soo good and funny and entertaining.
The Orlando Social show was the first date of the tour, so if Reggie is coming your way, you should go to the show, you should buy a t-shirt :)
Thursday morning Janine and I went to our little Orlando breakfast spot, headed over to one of the outlet malls so I can show her the HUUGEE Victoria's Secret Outlet store (which is seriously amazing). Afterwards she dropped me off at the airport, I got my boarding pass, and flew back to South Florida. It was quite an awesome 24 hour trip to Orlando. Yvette, my flight attendant spouse, picked me up from the airport, and then we went to go eat at Hooters like we always do (extra blue cheese and ranch please). I don't care for Hooters food (their wings are boring), but Yvette loves their buffalo shrimp. And THANK ALLAH they have new sauces, haha--I tried the Honey Thai wings and so finally hooters wings are acceptable again.

The other day I was on Kiersten's computer looking for pictures for a sidekick background for her, and I found this picture! It was back when she came up to Orlando during ffts cd release/universal studios fun time. I think it's funny, so it's my new default.
And today I decided to make lurking more fun and make an archive..however I could not for the life of me figure it out with blogger. meh...I guess it's better this way. So instead of reading text archives, you, the lurker, (and by lurker I mean friend) will just have to go through picture stories in the photojournal.
I'm obsessed with the Olympics. Yesterday I spent all day watching it back and forth between NBC & MSNBC. Men's Basketball (USA vs. CHINA), Women's Badminton (CHINA vs. TAIWAN), Women's Volleyball (?? I fell asleep on the couch during this), Men's Shooting? haha, Women's Gymnastics, and Swimming----and seriously Michael Phelps--what to say about that boy. What a dream boat! I was a fangirl back in 2004 during Athens, and now I am total fangirl again for that beautiful man!

This moment last night was amazing. I was screaming in my house so proud of the USA. That's what France gets for talking crap before hand! CRAP IN YOUR FACE FRANCE!

Yesterday was Yvette's birthday. We went to Aventura mall (which has a new wing with a 3rd level that has a GIGANTIC FOREVER 21 and also a For Love 21 right next to it!!!!!!!) and then we went back home and cooked a ridiculously fantastic Puerto Rican feast! Pork and rice, beef empanadas, guava+cream cheese empanadas, tostones, yummmiessssssss...it was so good. I am an empanada master now.
Since all of those festivities were last night, and usually exciting festivities happen on Friday nights, I thought yesterday was Friday resulting in today being Saturday..and I was soo bummed last night because I thought I missed the Olympic Games Opening Ceremony............but then I figured out that today is IN FACT FRIDAY AND I WILL WATCH THE OPENING CEREMONY IN AN HOUR WITH MY MOM! I AM SO EXCITED! They always do the craziest things, and since the olympics are in China, there will no doubt be some crazy acrobatics...I'm psyched.
I applied for a job with the city today. Let's keep our fingers crossed people!
Also, lots of non-Florida family members are coming into town this week and I am soooo excited to see little cousins, funny uncles, and totally awesome aunties!

I am going to miss working at Dragons...I spent a little over 1.5 years there, and it was one of the best experiences ever. I dealt with some of the craziest, weirdest people ever, beit guests to the park or coworkers from another planet. I can honestly deal with any guest situation thrown at me.
Packing up all my stuff in boxes was not fun...I threw out so much crap..it's amazing how I just accumulated. Moving was kinda sad. I was in Orlando for 2 years and I had so many memories in that apartment, in that city! I'm back in South Florida now and I still haven't unpacked all my stuff. I did my orientation and soon will be getting an email about meeting up with an advisor to help me register for classes. School-wise everything is coming together. In one way I am sad to have to leave Orlando, but I am happy to be back in South Florida with my family and all my friends down here. I have a whole new set of friends in Orlando and tons of places to stay at whenever I go up there for someones birthday or a show..it's a nice feeling.
I gotta get a new job soon too! yiiiiiiikesssssss

Toy Story Mania (in Hollywood Studios) is such an awesome shooting-ride. The waiting area for that ride is so cute. It has all types of games on the walls and the ceiling, including a giant scrabble board :)

California was really amazing.
Everyone needs to go see WALL-E.
Today was my first day back at work and it was great. My section of Islands of Adventure is transforming into the Wizardry world of harry potter or something like that...there is some technical name for it that we HAVE to call it by because of copyright laws. wacckkk ..it's harry potter mannnnn.
Anyways the last thing I have to say is that America's Best Dance Crew is the best show right now. I love it too much. Cute boys hip hop dancing rules my heart. I'm definitely getting sick of Mario Lopez though. for. real.
